Ok, so my pamphlet says this regarding one missed pill: "take it as soon as you remember. Take your next pill at regular time. This may mean having two pills in one day."
So if I missed my pill on Thursday that I regularly take everyday at 9:58 pm, and I didn't remember until the day after (Friday), that means I am supposed to take two right? I ended up taking one at 7 pm (when I remembered) then I took my scheduled one for Friday at 9:58 pm. So I ended up taking two pills that Friday. Did I not follow the instructions right?

So you took it as soon as you remembered, and then your next pill at the regular time. This meant that you had two pills in one day.
Looks to me like you followed the instructions to the letter.
